Ingredients

Dip Layers

  • 1 16-ounce can refried beans
  • 2 ripe avocados, peeled and pitted
  • Juice of 1 lime
  • Salt and pepper, to taste
  • 1 8-ounce container sour cream
  • 1 cup chunky salsa (drained)
  • 1 cup shredded Mexican blend or cheddar cheese
  • 1 2.25-ounce can sliced olives
  • 34 green onions, sliced
  • ¼ cup diced tomatoes
  • 2 Tablespoons diced jalapeno peppers (optional)

Instructions

  1. Prepare the guacamole: In a small mixing bowl, combine the peeled and pitted avocados with the fresh lime juice. Season with salt and pepper to taste, then mash together with a fork until creamy but still slightly chunky. Set aside.
  2. Layer the refried beans: Spoon and evenly divide the refried beans into the bottom of each small serving cup or container, creating the first layer of the dip cups.
  3. Add the guacamole and sour cream: Layer the prepared guacamole on top of the beans, followed by a layer of sour cream, spreading gently to keep the distinct layers visible.
  4. Layer the salsa: Drain any excess liquid from the chunky salsa to prevent sogginess, then spoon an even amount over the sour cream layer in each cup.
