A quick and flavorful 5-minute peanut noodles recipe featuring a creamy, spicy peanut sauce tossed with tender knife cut noodles. Perfect for a satisfying lunch or dinner.

Ingredients

Noodles

  • 3.5 ounces knife cut noodles (or noodles or pasta of your choice)

Peanut Sauce

  • 2 tablespoons creamy peanut butter
  • 1 tablespoon regular soy sauce
  • 1 tablespoon chili oil (adjust to taste)
  • ½ tablespoon Chinese black vinegar (or rice vinegar)
  • 1 teaspoon granulated sugar

Garnish (optional)

  • Cilantro or green onions, roughly chopped or thinly sliced

Instructions

  1. Cook the noodles: Bring a pot of water to a boil and cook the knife cut noodles for about 5 minutes or according to the package instructions until tender but still firm to the bite.
  2. Prepare the peanut sauce: While noodles cook, combine creamy peanut butter, soy sauce, chili oil, Chinese black vinegar, and granulated sugar in a bowl. Mix until smooth and well blended. If the sauce is too thick, add 1 to 2 tablespoons of the reserved noodle cooking water to thin it to your preferred consistency.
  3. Toss noodles with sauce: Drain the cooked noodles and immediately add them to the peanut sauce. Mix thoroughly to ensure every noodle is well coated with the creamy sauce.
  4. Garnish and serve: Top the peanut noodles with extra chili oil and sprinkle with chopped cilantro or green onions, or both, if desired. Serve immediately and enjoy!

Notes

  • You can substitute knife cut noodles with any preferred noodles or pasta like spaghetti, ramen, or rice noodles.
  • Adjust chili oil quantity to control the spiciness of the dish.
  • If you prefer a looser sauce, adding some cooking water is essential to make the sauce coat the noodles better.
  • This dish can be served warm or at room temperature.
  • For a gluten-free version, use gluten-free soy sauce and gluten-free noodles.
