Delicious no-bake Biscoff Pie Bars featuring a buttery biscuit crust, creamy cheesecake layer, and a gooey Biscoff spread topping. Perfect for cookie butter lovers looking for a quick and indulgent treat.

Ingredients

200 g Lotus Biscoff biscuits, finely crushed

60 g unsalted butter, melted

400 g Biscoff spread, melted (+ 40 g more for topping)

115 g full-fat cream cheese, at room temperature

30 g unsalted butter, softened

260 g icing sugar, sifted

Instructions

  1. In a food processor, crush the Biscoff biscuits into fine crumbs.
  2. Combine the crushed biscuits with the melted butter until well mixed.
  3. Press the mixture into the base of a lined 8×8-inch baking pan to form a firm crust.
  4. In a separate bowl, beat together the cream cheese, softened butter, and sifted icing sugar until smooth and creamy.
  5. Spread the cream cheese mixture evenly over the biscuit base.
  6. Pour the melted Biscoff spread over the cream cheese layer and gently spread to cover.
  7. Refrigerate the bars for at least 1 hour and 20 minutes to allow them to set properly.
  8. Once set, cut into 16 squares and serve chilled.
