Instructions

  1. Prepare broccoli: Cut the broccoli into small florets. Place them in a colander and pour boiling water over to blanch, then immediately pour cold water over to stop the cooking process. Set aside.

  3. Add flour and liquids: Sprinkle in the flour and stir thoroughly to combine. Slowly add the vegetable stock and heavy cream while whisking continuously to prevent lumps. Bring the mixture to a simmer and let it thicken for 1 to 2 minutes.
  4. Cook pasta and broccoli: Add the uncooked spiral pasta and blanched broccoli to the pan. Stir to coat evenly with the sauce. Cover and cook for 12 to 15 minutes, stirring occasionally to prevent the pasta from sticking, until the pasta is tender and the sauce is creamy.
