A quick and fresh Italian garden pasta recipe that combines al dente spaghetti with a vibrant mix of fresh tomatoes, basil, garlic, and extra virgin olive oil. Ready in just 15 minutes, this versatile dish can be served warm or cold, perfect for a light and flavorful meal any day of the week.

Ingredients

Pasta

  • 1 pound spaghetti

Garden Sauce

  • 2 large tomatoes, diced
  • 1/2 cup chopped fresh basil
  • 2 teaspoons minced garlic (about 2 cloves)
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Boil Pasta: Bring a large pot of salted water to a rolling boil. Add 1 pound of spaghetti and cook according to the package instructions until al dente, which usually takes about 8-10 minutes.
  2. Prepare the Sauce: While the pasta cooks, dice 2 large tomatoes. In a large mixing bowl, combine the diced tomatoes with 1/2 cup of chopped fresh basil, 2 teaspoons of minced garlic, and 1/4 cup of extra virgin olive oil. Stir well to mix all ingredients and let the flavors marinate while the pasta finishes cooking.
  3. Combine Pasta and Sauce: Once the pasta is cooked, drain it thoroughly and immediately add it to the bowl with the tomato and basil mixture. Toss everything together to evenly coat the pasta with the fresh garden sauce.
  4. Season: Add 1 teaspoon of salt and 1/2 teaspoon of freshly ground black pepper to taste. Mix again to incorporate the seasoning evenly throughout the dish.
  5. Serve: This pasta can be served warm right away or chilled and served cold for a refreshing alternative. Enjoy as a light main course or a side dish.
