Ingredients

  • 1 teaspoon chili flakes
  • 2 tablespoons soy sauce
  • ½ teaspoon brown sugar (or to taste)

Instructions

  1. Boil Water: Heat water in a pan or pot until it reaches a rolling boil, preparing to cook the noodles.
  2. Cook Noodles: Add the ramen noodles to the boiling water and cook until al dente (tender), making sure not to use the seasoning packet.
  3. Reserve Cooking Water: Before draining, scoop out ¼ cup of the noodle cooking water and set it aside to add flavor and moisture to the sauce later.
  4. Mix Sauce: Whisk together the soy sauce and brown sugar in a small bowl until the sugar is dissolved, then set aside.
  5. Sauté Aromatics: In a pan, heat the sesame oil over medium heat. Add the finely chopped white parts of the green onion and garlic, sautéing for about one minute until fragrant.

  7. Combine Sauce and Water: Pour the prepared soy sauce and brown sugar mixture into the pan along with the reserved noodle water; stir to combine all the flavors into a cohesive sauce.
