  • 2 cups cooked jasmine rice (cold & day-old, or substitute with any white long grain rice)
  • 1 green onion (finely chopped)
  • 2.5 tbsp regular soy sauce (or light soy sauce; avoid dark soy sauce)
  • 1/2 tbsp sesame oil
  • 4 large eggs (beaten)
  • 2 tbsp vegetable oil (or any neutral oil)

Instructions

  1. Heat oil: Heat 2 tablespoons of vegetable oil in a large pan or wok. If using a wok, allow the oil to heat until it just begins to smoke for a slightly smoky flavor; skip this step if using a regular pan.
  2. Cook eggs: Pour the beaten eggs into the hot oil and quickly stir-fry them so they begin to solidify and take shape, but remain moist and slightly soft.
  3. Add rice: Once the eggs are partially cooked but still moist, add the cold, day-old rice to the pan. Break apart any clumps of rice by stirring and tossing to ensure even texture.
  4. Sauté with green onions: Push the rice and eggs to one side of the pan. Add any remaining oil to the empty space, then add the finely chopped green onions. Mix the green onions into the rice and eggs thoroughly.
  5. Season and finish: Pour soy sauce and sesame oil around the edges of the pan and toss the rice mixture continuously until all grains are evenly coated and the rice has taken on a light brown color. Remove from heat immediately to avoid overcooking. Serve hot and enjoy!

  • Using day-old rice is crucial as fresh rice tends to be too moist and sticky for the best fried rice texture.
  • If you don’t have jasmine rice, any long grain white rice will work as a substitute.
