Zucchini Fritters are a delicious and crispy appetizer or side dish made with fresh grated zucchini, Parmesan cheese, and simple seasonings. These fritters are quick to prepare and cook on the stovetop, producing a golden-brown exterior and tender interior, perfect for serving with a creamy ranch dip.

  • 1 pound zucchini (about 3 medium)
  • 1 teaspoon salt
  • 2 large eggs
  • ¾ cup all-purpose flour
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • 2 tablespoons avocado oil

Instructions

  1. Prepare the Zucchini: Place the grated zucchini into a kitchen towel, sprinkle with salt, and allow to rest for 10 minutes. This step draws out excess moisture. After resting, squeeze out all the liquid and discard it. The zucchini should measure about 1 heaping cup packed when dry.
  2. Mix Ingredients: Transfer the squeezed zucchini into a medium mixing bowl. Add eggs, flour, grated Parmesan, garlic powder, onion powder, and black pepper. Mix thoroughly until the mixture is well combined and sticky enough to hold together.
  3. Heat the Skillet: Warm a large skillet over medium heat and add the avocado oil, allowing it to heat until shimmering but not smoking.
  4. Cook the Fritters: Scoop approximately 3 tablespoons of the zucchini mixture onto the hot skillet and flatten gently with a spatula into a fritter shape. Cook for 2-3 minutes on the first side until golden brown and crispy. Flip carefully and cook for an additional 2 minutes or until the other side is golden and cooked through.
  5. Serve: Remove fritters from the skillet and serve warm, accompanied by ranch dip if desired.

Notes

  • Storage: Store leftover fritters in an airtight container in the refrigerator for up to 5 days. Reheat in the microwave, skillet with olive oil, or air fryer.
  • Freezing: To freeze uncooked fritters, arrange them on a flat baking dish in the freezer for at least 4 hours, then transfer to an airtight bag. Thaw overnight in the refrigerator before cooking. Cooked fritters can be frozen in airtight bags and reheated by thawing overnight and baking at 350°F until warmed through.
  • Substitutions: Use flax eggs (1 tablespoon ground flaxseed + 3 tablespoons water per egg) for an egg alternative. Substitute gluten-free flour in a 1:1 ratio to make the recipe gluten-free.
