  • 500 g cooked brown rice (2 x Tesco Microwave Wholegrain Rice 250g packets)
  • 2 large eggs, beaten
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 100 g frozen peas
  • 2 spring onions (scallions), sliced finely

Optional Garnish

  • Fresh coriander, chopped
  • Additional chopped spring onions
  • Sliced red chillies

Instructions

  1. Brown the Turkey Mince: Heat a wok or a very large non-stick frying pan over high heat and stir-fry the turkey breast mince for about 4 minutes, or until it is nicely browned and cooked through, stirring frequently to break up the mince.
  2. Add the Cooked Rice: Incorporate the cooked brown rice into the pan with the turkey and continue stir-frying for 2 minutes to heat the rice thoroughly and combine flavors, ensuring the rice separates well.
  3. Cook the Eggs: Push the rice and turkey mixture to the sides of the pan to form a well in the center. Pour the beaten eggs into this well and leave them undisturbed for about 45 seconds until they begin to set, then stir the partially cooked eggs into the rice and turkey mixture, blending everything evenly.
  4. Add Peas and Crispiness: Toss in the frozen peas and continue stir-frying for another 2 minutes or until the peas are cooked through and you start to see some crispy bits forming at the bottom of the pan, adding great texture.
  5. Season and Finish: Stir in the soy sauce, sesame oil, and sliced spring onions. Mix well to combine all the flavors, then turn off the heat to retain freshness of flavors.
  6. Serve and Garnish: Serve the fried rice hot, garnished with fresh coriander, additional chopped spring onions, and sliced red chillies if desired, for an extra burst of color and flavor.
