Ingredients

For the Turkey Balls

  • 3 tablespoons almond meal
  • 1 lb ground turkey
  • 1 egg
  • 1/2 teaspoon coriander
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the Curry

  • 2 tablespoons oil
  • 2 onions, diced
  • 2 inch piece of ginger, finely chopped or grated
  • 6 cloves garlic, chopped
  • 1/2 cup water
  • 1 cup coconut milk (or almond milk or regular milk)
  • 3 tablespoons tomato paste
  • 1/2 teaspoon coriander
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chili powder
  • Salt and black pepper, to taste
  • Handful of fresh cilantro, for garnish

Instructions

  1. Preheat Oven. Preheat your oven to 375°F (190°C) to prepare for baking the turkey balls.
  2. Mix Turkey Ball Ingredients. In a large bowl, combine the almond meal, ground turkey, egg, coriander, cayenne, smoked paprika, salt, and black pepper. Mix thoroughly until all ingredients are evenly incorporated.
  3. Form and Bake Turkey Balls. Shape the mixture into meatballs of your preferred size. Arrange them on a baking sheet and bake in the preheated oven for 20 minutes until cooked through and slightly browned.
  4. Prepare the Curry Base. While the turkey balls bake, heat oil in a pan over medium heat. Add the diced onions and sauté for about 10 minutes until softened and translucent.
  5. Add Aromatics. Grate or finely chop the ginger and add it along with the chopped garlic to the pan. Sauté for an additional 5 minutes until fragrant.
  6. Add Liquids and Spices. Pour in the water, coconut milk, and tomato paste. Stir in the coriander, cumin, smoked paprika, cayenne, turmeric powder, and red chili powder. Mix everything well to combine the flavors.
