German Potato Soup (Kartoffelsuppe) is a classic, hearty dish that combines diced potatoes, carrots, celery, leeks, and smoked sausage in a creamy broth. This comforting soup is perfect for a cozy evening meal.

Ingredients

Potato Soup:

  • 2 lbs (900g) potatoes, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 leek, sliced and rinsed
  • 1 onion, diced
  • 5 cups (1.2L) vegetable or chicken broth
  • 2 tbsp butter

Additional Ingredients:

  • 1 cup (240ml) heavy cream
  • 8 oz (225g) smoked sausage, sliced
  • 2 bay leaves
  • Salt and pepper, to taste
  • Pinch of nutmeg
  • Fresh parsley, for garnish

Instructions

  1. Chop the Veggies: Dice potatoes, carrots, celery, onion, and slice the leek.
  2. Sauté: Cook onions, leeks, carrots, and celery in butter until soft.
  3. Simmer: Add potatoes, broth, and bay leaves. Simmer for 20-25 minutes until the potatoes are tender.
  4. Blend: Remove bay leaves and partially blend the soup for a creamy texture.
  5. Finish: Stir in cream and sausage, season with salt, pepper, and nutmeg. Heat through and serve.

Notes

  • Use fresh, high-quality sausage for the best flavor.
  • For a vegetarian version, skip the sausage and use veggie broth.
  • Don’t blend too much—you want to keep some chunks for texture.
