This delicious Halloumi Burger recipe combines the salty, squeaky goodness of fried halloumi cheese with sweet roasted peppers, fresh tomato, cool homemade tzatziki, and wild rocket, all sandwiched in toasted sesame buns. Featuring a balance of textures and flavors, this vegetarian-friendly burger is perfect for a quick and satisfying meal in just 35 minutes.

Ingredients

For the Roasted Peppers

  • 3 mixed peppers, cut into thick slices (approx. 1.35£)
  • 1 tbsp olive oil
  • Salt, to taste

For the Tzatziki

  • 500 g Greek yogurt (1 pot, approx. £0.48)
  • ½ cucumber, grated or sliced (approx. £0.48)
  • Juice of ½ lime (approx. £0.15)
  • Salt, a generous pinch

For the Burger Assembly

  • 225 g halloumi cheese (approx. £2.70)
  • 4 tbsp sweet chilli sauce (approx. £1.00)
  • 1 beef tomato, sliced into rounds (approx. £0.75)
  • 4 sesame buns (approx. £1.20)
  • 150 g wild rocket (approx. £0.80)
  • Juice of the remaining ½ lime (approx. £0.15) for the tzatziki and garnish optional

Instructions

  1. Preheat the Oven: Set your oven to 392°F (200°C) to prepare for roasting the peppers.
  2. Roast the Peppers: Place the sliced mixed peppers on a baking tray, drizzle with olive oil, season with salt, and roast them in the preheated oven for 30 to 40 minutes until charred and tender.
  3. Make the Tzatziki: While the peppers roast, combine the Greek yogurt, grated cucumber, lime juice from half the lime, and a good pinch of salt in a bowl. Stir well to create a refreshing sauce.
  4. Fry the Halloumi: Slice the halloumi into thin pieces and lightly fry each side in a non-stick frying pan with a little olive oil for a couple of minutes until golden brown and crispy.
  5. Toast the Buns: When the peppers have about 10 minutes left in the oven, place the sesame buns cut-side down in a hot non-stick frying pan and toast them for approximately 2 minutes until lightly browned.
  6. Assemble the Burgers: Start with the bottom bun, spread a tablespoon of sweet chilli sauce, layer on the roasted peppers, add the fried halloumi, top with sliced tomato, spoon over some tzatziki, add a handful of wild rocket, and finish with the top bun. Serve immediately and enjoy!

  • Use thinly sliced halloumi so it fries quickly and crisps nicely.
