These Ground Beef Enchiladas are a quick and delicious Mexican-inspired main dish perfect for family meals. Ready in about 30 minutes, they feature seasoned ground beef, a flavorful enchilada sauce, and a cheesy topping baked to perfection for a comforting and satisfying dinner.

Ingredients

Meat Mixture

  • 1 pound ground beef
  • 1 yellow onion, diced
  • 1 tablespoon taco seasoning

Enchiladas

  • 2 cups enchilada sauce
  • 8 enchilada-size tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees Fahrenheit to prepare for baking the enchiladas.
  2. Cook Meat Mixture: Heat a large skillet over medium-high heat. Add the ground beef, diced onion, and taco seasoning. Cook, stirring occasionally, until the ground beef is browned and no longer pink.
  3. Drain Fat: Carefully drain the fat from the beef and onion mixture to avoid excess grease in your enchiladas.
  4. Combine Cheeses: In a large bowl, grate and mix together the cheddar and Monterey Jack cheeses.
  5. Prepare Baking Dish: Pour about 1/2 cup of enchilada sauce into the bottom of a baking dish and spread it evenly to create a flavorful base for the enchiladas.
  6. Assemble Enchiladas: Lay one tortilla flat on a clean surface. Spoon a portion of the beef mixture down the middle, then top with approximately 1/8 cup of the cheese blend. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat this process with the remaining tortillas.
  7. Add Sauce and Cheese Topping: Pour the remaining enchilada sauce over the assembled rolled tortillas in the baking dish, then sprinkle the rest of the cheese evenly on top.
  8. Bake: Place the baking dish in the preheated oven and bake for 15 to 20 minutes, or until the enchiladas are heated through and the cheese on top is melted and bubbly.

Notes

  • You can substitute the taco seasoning with homemade seasoning to control sodium levels.
  • For extra flavor, add chopped jalapeños or green chilies to the beef mixture.
  • Use corn tortillas instead of flour for a gluten-free option.
  • Leftover enchiladas can be stored in the refrigerator for up to 3 days and reheated in the oven.
  • Serve with sour cream, guacamole, or fresh cilantro for added taste.
