This luscious Sweet Potato Casserole combines creamy, spiced mashed sweet potatoes with a crunchy brown sugar and pecan topping, making it a perfect and crowd-pleasing dessert for your Thanksgiving dinner or any special occasion.

Ingredients

For the Sweet Potato Filling

  • 3 pounds sweet potatoes (peeled and cut into 1-inch cubes)
  • ½ cup packed brown sugar
  • ⅓ cup melted butter
  • 1 teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ teaspoon nutmeg

For the Pecan Topping

  • ¼ cup butter (melted)
  • ⅓ cup brown sugar
  • 2 tablespoons flour
  • 1 ¼ cups chopped pecans

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish to prevent sticking and for easy cleanup.
  2. Cook Sweet Potatoes: Place the peeled and cubed sweet potatoes into a large pot and add enough water to cover them by about 1 inch. Bring the water to a boil over high heat, then reduce to a simmer and cook for approximately 15 minutes or until the sweet potatoes are fork-tender and easily mashable. Drain the water completely.
  3. Mash Sweet Potatoes and Mix Filling: Transfer the drained sweet potatoes into a large mixing bowl. Add the packed brown sugar, melted butter, vanilla extract, cinnamon, salt, and nutmeg. Mash all the ingredients together thoroughly using a potato masher or fork until smooth and creamy.
  4. Assemble Sweet Potato Layer: Spread the mashed sweet potato mixture evenly into the prepared 9×13 baking dish, smoothing out the top with a spatula or spoon.
  5. Prepare Pecan Topping: In a medium bowl, combine the melted butter, brown sugar, flour, and chopped pecans. Stir the ingredients together until the mixture forms a crumbly topping.
  6. Add Topping and Bake: Sprinkle the pecan topping evenly over the mashed sweet potato layer in the baking dish. Place the dish in the preheated oven and bake for 25-30 minutes, or until the casserole is hot and bubbly and the pecan topping is toasted and golden brown.
  7. Serve: Once done, remove from the oven and let it cool slightly before serving. Enjoy this comforting and sweet casserole as a delightful side or dessert!

Notes

  • You can prepare the sweet potatoes a day in advance and refrigerate the mashed mixture for enhanced flavor and convenience.
  • For a nut-free version, omit the pecans and substitute with toasted oats or shredded coconut in the topping.
  • Adjust the level of sweetness by varying the amount of brown sugar according to your preference.
  • To make it vegan, use a plant-based butter alternative.
  • Ensure not to overcook the sweet potatoes; they should be tender but not mushy for the best texture.
