Filling 1

  • 1 tablespoon pistachios (crushed)

Filling 3

  • 3 tablespoons cashew butter
  • ½ teaspoon cardamom
  • 1 tablespoon cacao nibs

Filling 4

  • 3 tablespoons creamy peanut butter
  • ½ teaspoon cinnamon
  • 1 tablespoon dark chocolate (roughly chopped)

Instructions

  1. Prepare the Dates: Use a small sharp knife to cut each Medjool date lengthwise on one side. Carefully remove the pits from the dates, creating a cavity for the fillings.
  2. Prepare the Fillings: In four small separate bowls, mix the paired ingredients for each of the four filling variations: ricotta with shredded coconut; goat cheese with honey; cashew butter with cardamom; and peanut butter with cinnamon. Set aside the cacao nibs, crushed pistachios, almonds, and chopped dark chocolate for toppings.
  3. Stuff the Dates: Using a spoon, fill each pitted date evenly with one of the four prepared fillings. Once filled, top each date with its accompanying topping: shredded coconut or almonds, crushed pistachios, cacao nibs, or chopped dark chocolate as desired. Feel free to mix and match according to your preference.
