Ingredients

Filling

  • 1012 ounces chopped frozen spinach (thawed)
  • 1 tablespoon butter
  • ½ medium onion, diced
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons chopped parsley or dill
  • ½ cup crumbled feta cheese
  • ½ cup shredded mozzarella or parmesan cheese
  • 4 ounces cream cheese, softened or at room temperature

Puff Pastry

  • 2 sheets puff pastry
  • 1 egg, beaten (for egg wash)
  • Sesame seeds (optional, for sprinkling)

Instructions

  1. Preheat and Prepare Filling: Preheat your oven to 400°F (200°C). Dice the onion and place it in a pan or skillet with 1 tablespoon of butter. Cook over medium-high heat for 3-4 minutes until softened. Mince the garlic and add it to the pan, sautéing for an additional minute before adding the thawed chopped spinach. Season the mixture with salt and pepper, and cook until all excess moisture evaporates.
  2. Combine Filling Ingredients: Transfer the cooked spinach mixture to a large bowl. Add the chopped parsley or dill, crumbled feta, shredded mozzarella or parmesan, and softened cream cheese. Gently mix everything together until well combined.
  3. Prepare Puff Pastry: On a floured surface, roll out the puff pastry sheets and cut them into squares or rectangles approximately 4×6 inches in size.
  4. Assemble Pastries: Spoon a portion of the filling onto each pastry rectangle. Fold the pastry over to enclose the filling, sealing the edges by pressing with a fork. Cut a few slits in the top of each pastry or use a lattice cutter to create a decorative design. Alternatively, place the filling over one whole sheet and cover with the other sheet, then cut into squares.
  5. Prepare for Baking: Place the assembled pastries onto a baking tray lined with parchment paper. Brush the tops with the beaten egg to give a glossy finish, and sprinkle with sesame seeds if desired.
