Ingredients

Whole Chicken:

  • 1 whole chicken (about 3 lb.), thawed
  • 3 tsp Italian Seasoning
  • 1 ½ tsp salt
  • 1 ½ tsp paprika
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tbsp olive oil

Veggies:

  • 6 ribs celery, chopped
  • 6 large carrots, peeled and chopped
  • 1 large onion, chopped
  • 24 oz baby potatoes, halved
  • Fresh herbs, such as rosemary & thyme

For Gravy:

  • 2 tbsp butter
  • 2 tbsp all-purpose flour

Instructions

  1. Prepare Chicken: Pat dry the whole chicken, season with a blend of Italian seasoning, salt, paprika, pepper, garlic powder, and onion powder mixed with olive oil.
  2. Cook Chicken: Place seasoned chicken on a bed of vegetables and herbs in the slow cooker. Cook on LOW for 6-8 hours or HIGH for 4-5 hours.
  3. Crispy Skin (Optional): For crispy skin, broil chicken briefly after slow cooking.
  4. Make Gravy: Strain cooking liquid, make a roux with butter and flour, then whisk in chicken drippings until smooth.
