Ingredients

Chicken and Coating

  • 650 g Skinless, boneless chicken breast (about 4 pieces, cut into bite-sized pieces)
  • 30 g Plain flour
  • Sea salt and freshly ground black pepper (to taste)

Sauce and Seasoning

  • 3 Garlic cloves (peeled and crushed)
  • 100 g Sun dried tomatoes (drained and very finely chopped)
  • 1 tsp Dried oregano
  • 2 tsp Paprika
  • 300 ml Boiling water
  • 1 Chicken stock cube (undiluted, crumbled)
  • 100 g Cream cheese
  • 50 g Parmesan (grated)
  • 15 g Fresh basil leaves

Instructions

  1. Coat the Chicken: Toss the bite-sized chicken pieces in the plain flour along with plenty of sea salt and freshly ground black pepper until evenly coated.
  2. Combine Ingredients in Slow Cooker: Place the coated chicken pieces into the slow cooker. Add the crushed garlic, finely chopped sun-dried tomatoes, dried oregano, paprika, crumbled chicken stock cube, and boiling water. Stir gently to distribute ingredients evenly.
  3. Cook the Chicken: Set the slow cooker to HIGH and cook for 2.5 to 3 hours, or choose LOW and cook for 5 to 6 hours, until the chicken is tender and fully cooked through.
  4. Add Creamy Finishing Touches: Just before serving, stir in the cream cheese, grated Parmesan, and fresh basil leaves until the sauce is smooth and creamy. Adjust seasoning with additional salt and pepper if needed.
