Rotel Chicken Spaghetti is a creamy, comforting casserole featuring tender chicken, spicy Rotel tomatoes, and a cheesy topping. This easy-to-make dish combines cooked spaghetti with sautéed onions, garlic, cream of chicken and mushroom soups, and shredded cheddar cheese, baked until bubbly and melted for a satisfying family dinner.

  • 1 Medium Onion, diced
  • 2 cloves Garlic, minced
  • 10.5 ounces Cream of Chicken Soup (1 can)
  • 10.5 ounces Cream of Mushroom Soup (1 can)
  • 10 ounces Rotel (1 can)
  • 2 cups Cooked Chicken Breast, chopped
  • 16 ounces Cooked Spaghetti
  • 1 cup Pasta Water (reserved from spaghetti cooking)
  • 2 cups Cheddar Cheese, shredded

Instructions

  1. Melt Butter: In a large pot over medium heat, melt 2 tablespoons of butter to start the base for sautéing.
  2. Sauté Onion: Add diced onion to the melted butter and cook until tender, about 5 minutes, stirring occasionally to prevent burning.
  3. Sauté Garlic: Add minced garlic and cook for 30 seconds until fragrant, being careful not to brown it.
  4. Add Soups, Rotel, Chicken, and Pasta Water: Stir in the cream of chicken soup, cream of mushroom soup, Rotel tomatoes, chopped cooked chicken, and half a cup of reserved pasta water until the mixture is well combined.
  5. Combine Spaghetti: Add cooked spaghetti to the pot and stir thoroughly to coat the pasta in the sauce.
  6. Adjust Sauce Consistency: Add additional reserved pasta water as needed until the sauce reaches your desired consistency, ensuring the mixture is creamy but not watery.
  7. Prepare for Baking: Pour the mixture into a 13×9 casserole dish, spreading it evenly.
  8. Top with Cheese: Sprinkle shredded cheddar cheese evenly over the top of the casserole.
  9. Bake: Cover the dish with aluminum foil and bake in a preheated oven at 350°F (175°C) for 25 minutes or until the casserole is heated through and the cheese is melted and bubbly.
