This light, airy Raspberry Meringue Bark is a fun, melt-in-your-mouth treat that is super easy to make! No piping individual meringues, just spread it on a cookie sheet and bake!

Ingredients

Egg White Mixture:

  • 3 egg whites, room temperature
  • 1/4 tsp cream of tartar
  • 1/8 tsp salt
  • 2/3 cup sugar
  • 3 tbsp finely crushed freeze-dried raspberries
  • 1/2 tsp vanilla extract

Topping:

  • Coarsely crushed freeze-dried raspberries for topping, optional

Instructions

  1. Preheat the oven: Preheat oven to 200 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat.
  2. Prepare the meringue: In the bowl of a stand mixer, beat egg whites until foamy. Add cream of tartar, salt, and sugar gradually. Beat until thick and glossy.
  3. Add flavor and texture: Gently fold in crushed freeze-dried raspberries and vanilla extract until just combined. Spread meringue on a baking sheet.
  4. Bake: Sprinkle with crushed raspberries and bake for about 2 hours until hardened. Cool completely.
  5. Serve: Break into pieces and store in an airtight container.
