Ingredients

Beef Marinade

  • 1 lb flank steak (or skirt steak / flat iron steak / hanger steak), sliced 1/4-inch thick against the grain
  • 1/4 cup water (cold or room temp.)
  • 1 tbsp cornstarch (or potato starch / tapioca starch)
  • 1 tsp regular soy sauce (or light soy sauce)
  • 1/2 tsp baking soda

Vegetables

  • 2 cups broccoli florets
  • 3/4 cup red bell pepper, diced
  • 1/2 cup carrots, sliced into 1/4-inch thick rounds
  • 1/2 small onion, diced

Stir-Fry Sauce

  • 1 tbsp oyster sauce (or vegetarian stir-fry sauce)
  • 1 tbsp regular soy sauce (or light soy sauce)
  • 1/2 tbsp dark soy sauce
  • 1 tbsp white granulated sugar (or cane sugar)
  • 1 tbsp cornstarch (or potato starch / tapioca starch)
  • 1 tsp sesame oil
  • 1/2 cup water (cold or room temp.)

Other

  • 1 tbsp vegetable oil (or any neutral oil) for frying beef
  • 1 tbsp vegetable oil (or any neutral oil) for stir-frying vegetables
  • 3 garlic cloves, minced

Instructions

  1. Prepare the Beef: Slice the flank steak against the grain at a 45-degree angle into 1/4-inch thick pieces, then transfer them to a large mixing bowl.
  2. Marinate: Add the marinade ingredients—water, cornstarch, soy sauce, and baking soda—to the sliced beef. Mix well and let it marinate for 20-25 minutes to tenderize and infuse flavor.
  3. Make the Stir-Fry Sauce: In a small bowl, combine oyster sauce, soy sauces, sugar, cornstarch, sesame oil, and water. Stir until the sugar and cornstarch dissolve completely. Set aside.
  4. Cook the Beef: Heat 1 tablespoon of vegetable oil in a large pan over medium-high heat. Once hot, add the marinated beef in a single layer. Fry for 2-3 minutes until cooked through and slightly browned at the edges. Remove beef from the pan and set aside.
  5. Stir-Fry the Vegetables: Lower the heat to medium. Add another tablespoon of vegetable oil, then add minced garlic, diced onions, broccoli florets, carrots, and red bell pepper. Add 1/4 cup water and stir-fry the vegetables until the water evaporates and vegetables are tender but crisp, about 1 minute.
  6. Add the Sauce: Pour the prepared stir-fry sauce over the vegetables and simmer until the sauce slightly thickens, coating the vegetables evenly.
