Dry Ingredients:
- 2½ cups all-purpose flour, sifted
- 2½ tsp baking powder
- ¼ tsp salt
- 1 tsp cinnamon
Wet Ingredients:
- 1 cup sugar
- ¾ cup olive oil (or vegetable oil)
- 1 ¼ cup orange juice
Additional Ingredients:
- ½ cup golden raisins (or other raisin variety)
- ½ cup chopped walnuts (or almonds/pecans)
- Powdered sugar (optional, for decorating)
- Preheat Oven: Preheat your oven to 350°F.
- Prepare Pan: Line a 10-inch baking pan with parchment paper and grease the sides with cooking spray or olive oil.
- Combine Dry Ingredients: In a medium bowl, whisk together sifted flour, baking powder, cinnamon, and salt. Set aside.
- Combine Wet Ingredients: In a stand mixer, combine sugar, olive oil, and orange juice until well mixed.
- Mix Batter: Slowly add dry ingredients to wet ingredients on low speed. Then, mix in walnuts and raisins until just combined.
- Bake: Transfer batter to the prepared pan and bake for 45-55 minutes until a toothpick comes out clean.
- Cool and Serve: Let cool in the pan for 5 minutes before transferring to a cooling rack. Dust with powdered sugar if desired.
