Ingredients

Dry Ingredients:

  • 2½ cups all-purpose flour, sifted
  • 2½ tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon

Wet Ingredients:

  • 1 cup sugar
  • ¾ cup olive oil (or vegetable oil)
  • 1 ¼ cup orange juice

Additional Ingredients:

  • ½ cup golden raisins (or other raisin variety)
  • ½ cup chopped walnuts (or almonds/pecans)
  • Powdered sugar (optional, for decorating)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F.
  2. Prepare Pan: Line a 10-inch baking pan with parchment paper and grease the sides with cooking spray or olive oil.
  3. Combine Dry Ingredients: In a medium bowl, whisk together sifted flour, baking powder, cinnamon, and salt. Set aside.
  4. Combine Wet Ingredients: In a stand mixer, combine sugar, olive oil, and orange juice until well mixed.
  5. Mix Batter: Slowly add dry ingredients to wet ingredients on low speed. Then, mix in walnuts and raisins until just combined.
  6. Bake: Transfer batter to the prepared pan and bake for 45-55 minutes until a toothpick comes out clean.
  7. Cool and Serve: Let cool in the pan for 5 minutes before transferring to a cooling rack. Dust with powdered sugar if desired.
