Ingredients

Main Ingredients:

  • 3 tbsp Olive Oil
  • 1 Onion – finely chopped
  • 3 cloves Garlic – minced
  • 32 oz Canned Diced Tomatoes
  • 2 tbsp Tomato Paste – tomato puree
  • 1 pinch Sugar
  • 1 lb Penne Pasta
  • ½ cup Grated Parmesan or Vegetarian Alternative

Optional Garnish:

  • Fresh Basil Leaves – optional, finely sliced

Instructions

  1. Add the olive oil to a large skillet or Dutch oven on medium-low heat.
  2. Saute the onions until starting to soften, about 5 minutes.

  3. Add the minced garlic and stir for a minute until fragrant.
  4. Immediately add the diced tomatoes and tomato paste along with a pinch of sugar.
  5. Bring the sauce to a boil, then reduce the heat to a simmer.
  6. Cook for about 20 minutes, stirring occasionally until the sauce thickens and flavors meld.
  7. Meanwhile, cook the penne pasta al dente in salted boiling water according to package instructions.
  8. Drain the pasta, reserving 1 cup of the pasta water.
  9. Combine the penne with the sauce, tossing well to coat the pasta.
  10. If needed, add a splash of reserved pasta water to loosen the sauce.
  11. Serve hot, garnished with freshly grated parmesan and basil leaves.
