Ingredients

For the Mushrooms:

  • 1 tbsp olive oil
  • 8 oz. white button mushrooms, sliced

For the Ground Beef:

  • 2 tbsp butter
  • 1/2 onion, diced
  • 1 lb. ground beef
  • 2 tsp garlic powder

For the Sauce:

  • 3 tbsp all-purpose flour
  • 1 tsp paprika
  • 1/4 cup dry sherry, or beef broth
  • 4 cups low sodium beef broth
  • 1 1/2 tsp salt
  • 1/2 tsp black pepper

Additional Ingredients:

  • 4 cups dry egg noodles
  • 1/2 cup sour cream
  • 1 to 2 tbsp freshly chopped parsley

Instructions

  1. Sauté the Mushrooms: In a large skillet, sauté the mushrooms in olive oil until tender, about 5 to 6 minutes. Set aside.
  2. Cook the Ground Beef: Melt butter in the skillet, then add ground beef, onion, and garlic powder. Cook until beef is browned. Drain excess fat.
  3. Make the Sauce: Stir in flour and paprika. Deglaze with sherry, then add beef broth, salt, and pepper. Bring to a boil.
  4. Add Noodles: Stir in egg noodles, reduce heat, cover, and simmer until noodles are tender, about 8 to 10 minutes.
  5. Finish the Dish: Return mushrooms to the skillet, then stir in sour cream and parsley. Serve hot.
