Ingredients

Dry Ingredients

  • 1¾ cup All-purpose Flour
  • ½ cup Cocoa Powder
  • ½ cup Light Brown Sugar
  • ¾ cup Sugar
  • ¾ tsp Baking Powder
  • ½ tsp Baking Soda
  • ½ tsp Salt
  • 1 tsp Instant Coffee Powder

Wet Ingredients

  • 1 large Egg
  • ½ cup Vegetable Oil
  • ½ cup Milk
  • ¾ cup Yogurt or Milk
  • 1 tsp Vanilla Extract

Chocolate

  • ½ cup Dark Chocolate Chunks
  • ½ cup Milk Chocolate Chunks
  • 1 cup Dark Chocolate (for ganache)

Ganache

  • ¾ cup Heavy Cream

Instructions

  1. Preheat Oven: Preheat your oven to 355℉ (180℃). Line muffin pans with liners to prepare for baking.
  2. Mix Dry Ingredients: In a mixing bowl, whisk together all the dry ingredients thoroughly. Sift the mixture to ensure even blending and to avoid overmixing when combined with wet ingredients.
  3. Combine Wet Ingredients: In a separate bowl, whisk all wet ingredients until smooth. Then, pour into the dry mixture and whisk gently until lump-free and smooth. Avoid overmixing to keep muffins tender.
  4. Add Chocolate Chunks: Fold the dark and milk chocolate chunks into the batter gently with a spatula. Scoop batter into the lined muffin tins, filling each liner full, and top with additional chocolate chunks.
  5. Bake Muffins: Bake the muffins for about 20 minutes. Test doneness by inserting a wooden toothpick; it should come out mostly clean. Remove muffins and allow them to cool completely.
  6. Prepare Chocolate Ganache: While the muffins bake, heat heavy cream in a saucepan over medium heat until bubbles form around the edges. Turn off the heat, add dark chocolate, and let sit for 3 minutes before stirring until smooth and glossy.
  7. Cool Ganache: Let the ganache cool and thicken to pipeable consistency, then transfer it to a piping bag for filling.
  8. Fill Muffins: Use a knife or chopstick to create a deep hole in the center of each cooled muffin. Pipe the thickened ganache into the hole, filling until it slightly overflows. Serve and enjoy!
