Ingredients

  • 2 tablespoons olive oil (plus more for roasting)

  • 1 medium yellow onion, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 4 cups vegetable broth
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the Oven: Set the oven to 400°F (200°C) and line a baking sheet with parchment paper.
