Ingredients

Cookies Crust:

  • 1 (11-ounce) box vanilla wafer cookies, divided
  • 1/4 plus 1/8 teaspoon kosher salt
  • 8 tablespoons (1 stick) unsalted butter, melted and cooled

Lemon Filling:

  • 2 (3.4-ounce) boxes instant lemon pudding mix
  • 3 cups cold whole milk
  • 2 tablespoons granulated sugar
  • 2 teaspoons finely grated lemon zest (from 1 medium lemon)

Cream Cheese Layer:

  • 8 ounces cream cheese, at room temperature
  • 1 1/2 cups cold heavy cream
  • 1/2 cup powdered sugar, divided
  • 2 tablespoons freshly squeezed lemon juice (from 1 medium lemon)
  • 1 teaspoon lemon or vanilla extract

Instructions

  1. Prepare Crust: Line an 8×8-inch baking pan with parchment paper. Process cookies, salt, and butter; press into pan.
  2. Prepare Lemon Filling: Whisk pudding mix, milk, sugar, and lemon zest; let thicken.
  3. Prepare Cream Cheese Layer: Beat cream and powdered sugar until stiff peaks form. In a separate bowl, beat cream cheese, sugar, lemon juice, lemon extract, and salt until fluffy. Fold in whipped cream.
  4. Assemble: Spread cream cheese mixture over crust, top with lemon pudding, then whipped cream. Refrigerate for at least 4 hours.
  5. Serve: Crush reserved cookies over the top and garnish with lemon zest. Cut into 12 pieces to serve.
