Korean Marinated Eggs, known as Mayak Gyeran, are soft-boiled eggs soaked in a flavorful mixture of soy sauce, honey, garlic, green peppers, and sesame oil. Perfect as a savory snack or a delicious addition to rice bowls, these eggs are marinated to absorb a sweet, salty, and aromatic flavor profile, making them irresistible and addictive.

Ingredients

Eggs and Boiling Ingredients

  • 12 Eggs
  • 2 tsp Salt
  • 2 tbsp Vinegar

Marinade

  • 6 cloves Garlic, minced
  • 2 Korean Green Peppers, chopped
  • 1 Red Chili, chopped (optional)
  • 3 Green Onions, chopped (optional)
  • 1 cup Soy Sauce
  • ½ cup Honey
  • 1 tbsp Sesame Oil (optional)
  • ½ cup Water
  • 1 tbsp Sesame Seeds

Instructions

  1. Boil the Eggs: In a pot, add enough water to cover all the eggs along with 2 teaspoons of salt and 2 tablespoons of vinegar. Bring the water to a simmer over medium-high heat. Once boiling, carefully add the 12 eggs and cook them for 6 minutes to achieve a soft-boiled texture.
  2. Cool and Peel: After 6 minutes, remove the eggs from the boiling water and immediately transfer them to a bowl of ice water. Let them rest for at least 10 minutes to stop cooking and make peeling easier. Peel the eggs carefully and set them aside.
  3. Prepare the Marinade: In a container, combine minced garlic, chopped Korean green peppers, optional chopped red chili, chopped green onions, soy sauce, honey, sesame oil (optional), and water. Mix well until all ingredients are fully integrated.
  4. Marinate the Eggs: Place the peeled eggs into the marinade, ensuring they are fully submerged. Cover the container and refrigerate for at least 2 hours, but preferably overnight, to allow the eggs to absorb the flavors deeply.
  5. Serve and Enjoy: Sprinkle sesame seeds over the marinated eggs before serving. These eggs are delicious served alongside steamed hot rice or used as a topping for various Korean dishes.
