A refreshing and invigorating Kiwi Mojito mocktail that combines the tropical sweetness of kiwi with zesty lime, fresh mint, and a hint of ginger, topped with sparkling water for a bubbly finish. Perfect for a healthy and delicious non-alcoholic beverage to enjoy any time.

Ingredients

Fruits and Herbs

  • 1 kiwi, roughly chopped
  • 1/2 lime, squeezed
  • Handful of mint leaves

Sweeteners and Flavorings

  • 1/2 tbsp raw sugar
  • Ginger root, grated — desired amount

Liquids

  • 4 oz coconut water
  • Ice (as needed)
  • Splash of sparkling water

Garnish

  • Mint sprig

Instructions

  1. Prepare the kiwi and lime: Roughly chop one kiwi to release its flavor and squeeze half a lime to extract fresh lime juice.
  2. Muddle ingredients: In a glass, combine the chopped kiwi, lime juice, raw sugar, a handful of fresh mint leaves, and a desired amount of grated ginger. Gently muddle these ingredients together to blend the flavors and release the mint’s aroma.
  3. Add coconut water and ice: Pour 4 oz of coconut water into the glass and fill it with ice to chill the drink thoroughly.
  4. Top with sparkling water: Add a splash of sparkling water to give the mocktail a refreshing fizz.
  5. Garnish and serve: Garnish with a sprig of mint and serve immediately for the best flavor and presentation.

Notes

  • Adjust the amount of ginger according to your taste preference, as it can be spicy.
  • Use fresh lime juice for a brighter flavor.
  • Raw sugar can be substituted with honey or agave syrup for a different sweetness profile.
  • For a colder drink, chill the coconut water beforehand.
  • This mocktail is naturally vegan and gluten-free.
