  • 1 1/4 cups raw, unsalted pistachios, shelled (125g)
  • 2 tablespoons unsalted butter (30g)
  • 3/4 cup whole milk or cream, divided (190ml)
  • 4 oz good white chocolate, chopped (about 1 cup)
  • 2 tablespoons confectioner’s sugar
  • 1/4 teaspoon kosher salt (Diamond Crystal)

Instructions

  1. Prepare Pistachios: Boil shelled pistachios for 3 minutes, drain, and remove skins. Dry pistachios thoroughly.
  2. Melt Ingredients: Combine butter and 1/4 cup milk in a bowl. Melt white chocolate with milk mixture.
  3. Blend: In a blender, combine pistachios, sugar, salt, and melted mixture. Blend until smooth, adding milk gradually.
  4. Chill: Transfer the cream to a container and refrigerate until ready to use.
