Combine 1 cup of quinoa with 2 cups of water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and set aside.
Toss the diced sweet potatoes and broccoli florets with olive oil, salt, and pepper. Spread them on a baking sheet in a single layer. Roast for 25–30 minutes, flipping halfway through, until tender and lightly browned.
