Ingredients

Chicken and Coating

  • 600 g chicken breast, cut into strips
  • 200 g cornflakes
  • 3 tbsp flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp paprika
  • 2 eggs
  • Vegetable oil spray (2-4 sprays per goujon)
  • Flaky salt

Wrap and Salad

  • 1 round lettuce
  • 6 salad tomatoes, thinly sliced
  • 8 small white wraps or 4 large wraps
  • 200 g cheesy singles
  • 1 red onion, thinly sliced

Instructions

  1. Preheat Airfryer: Preheat your airfryer to 200°C (390°F) to ensure it’s hot and ready for cooking the chicken strips evenly and to achieve maximum crispiness.
  2. Prepare Ingredients: Begin by preparing your salad ingredients. Slice the chicken breasts into strips and pat them dry thoroughly using paper towels to help the coating stick better.
  3. Crush Cornflakes: Place the cornflakes into a ziplock bag on a chopping board. Use a rolling pin or bottle to crush them to a coarse breadcrumb texture, which will give the chicken a crispy crust.
  4. Set Up Breading Stations: On three separate plates, add the flour seasoned with salt, whisk the eggs, and mix the crushed cornflakes with onion powder, garlic powder, and paprika. These will be used for coating the chicken.
  5. Coat Chicken: Coat each chicken strip first in the flour, then dip into the beaten egg, and finally coat thoroughly with the seasoned cornflake mixture. Lay the breaded chicken strips on a tray.
  6. Air Fry Chicken: Spray the coated chicken pieces lightly with vegetable oil spray. Place the pieces carefully in the airfryer basket without overlapping. Depending on the size of your airfryer, you might need to cook in batches. Cook for 5 minutes at 200°C, flip the chicken pieces, and cook for another 5 minutes until golden and crispy.
  7. Season and Assemble Wraps: Once cooked, season the crispy chicken strips generously with flaky salt. To assemble the wrap, place one large tortilla flat, add a layer of lettuce, sliced tomato, and red onion, followed by two slices of cheese. Top with a few crispy chicken goujons, then roll up the wrap tightly and serve immediately.
