Ingredients

For the Chicken:

  • 1.5 lbs boneless, skinless chicken breasts (about 3 large chicken breasts or 1.5 lbs chicken cutlets)
  • ½ cup whole wheat flour
  • 3 large eggs
  • 1.5 cup shredded mozzarella
  • 1.5 cups marinara sauce

For the Breading Mixture:

  • 1 cup whole wheat bread crumbs (unseasoned)
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon black pepper
  • 2 teaspoons dried basil
  • 2 teaspoons dried parsley

Instructions

  1. Butterfly and pound chicken breasts: Slice the chicken breasts in half lengthwise, then pound them between plastic wrap until about ¼ inch thick.
  2. Preheat the oven: Set it to 425°F and line a baking sheet with parchment paper.
  3. Prepare the breading: Set up three bowls with whole wheat flour, beaten eggs, and a mixture of bread crumbs, Parmesan, pepper, basil, and parsley.
  4. Coat the chicken: Dip each cutlet in flour, then egg, then the bread crumb mixture, coating evenly.
  5. Bake the cutlets: Place them on the baking sheet and bake at 425°F for 30 minutes, flipping halfway through.
  6. Add toppings: Top each cutlet with marinara sauce and mozzarella, then broil for 2 minutes until the cheese is melted.
  7. Serve: Enjoy your chicken Parmesan over pasta or salad.
