Delicious and healthy chicken avocado wraps that combine tender grilled chicken, fresh vegetables, creamy avocado, and sharp cheddar cheese wrapped in a warm burrito-sized tortilla. Ingredients

Chicken

  • 2 chicken breasts, cooked and sliced
  • Salt, to season
  • Black pepper, to season
  • 2 tablespoons olive oil

Wrap Fillings

  • 6 large burrito size tortillas
  • 3 cups lettuce, chopped
  • 1 large tomato, diced
  • 1 avocado, diced
  • 1 cup sour cream
  • 3 cups yellow sharp cheddar cheese, grated

Instructions

  1. Cook the Chicken: Rinse and pat dry the chicken breasts. Season both sides with salt and pepper. Preheat a pan over medium-high heat and add 2 tablespoons of olive oil. Place the chicken in the skillet, cover with a lid, and cook for about 5-7 minutes. Flip the chicken and cook for an additional 5 minutes or until the internal temperature reaches 165-170°F, ensuring the meat is thoroughly cooked.
  2. Prep the Ingredients: Slice the cooked chicken into strips. Chop the lettuce, dice the tomato and avocado, and grate the sharp cheddar cheese to prepare all the wrap fillings.
  3. Assemble the Wraps: Place one large burrito-sized tortilla on a plate. Layer about ½ cup chopped lettuce, ¼ cup diced tomatoes, diced avocado, a tablespoon of sour cream, several slices of grilled chicken, and top with ¼ cup grated sharp cheddar cheese.
  4. Wrap the Ingredients: Fold the tortilla edges over the fillings like an envelope to securely enclose all ingredients. Repeat this process for the remaining tortillas and fillings.
  5. Grill the Wraps: Preheat a clean pan on medium-high heat without adding any oil. Place the wrapped tortillas seam side down in the pan and grill until they develop a golden brown color, about 2-3 minutes. Flip and grill the other side until equally golden and crisp.
