Ingredients

Ground Beef Mixture:

  • 2 lbs ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon oregano
  • 1/4 teaspoon basil
  • 1/8 teaspoon seasoning salt
  • 1 (2 ounce) package onion soup mix (for 3 or 4 servings)

Soup Base:

  • 6 cups boiling water
  • 1 (8 ounce) can tomato sauce

Vegetables and Pasta:

  • 4 carrots, cut up
  • 1/2 cup corn
  • 1 cup celery, sliced
  • 1 cup elbow macaroni

Instructions

  1. Brown the Meat: In a large saucepan, brown the ground beef, then drain excess fat.
  2. Season the Beef: Add salt, pepper, oregano, basil, seasoned salt, and onion soup mix to the meat. Stir well.
  3. Add Liquid: Pour in the boiling water and tomato sauce. Cover and simmer for about 15 minutes.
  4. Prepare Vegetables: While the soup simmers, prepare the celery and carrots.
  5. Add Vegetables: Add the prepared vegetables and corn to the simmering mixture. Continue cooking for 30 minutes.
  6. Include Pasta: Stir in the elbow macaroni and simmer for an additional 30 minutes, adding more water if needed and stirring occasionally.
  7. Freeze and Reheat: To freeze, place the soup in a rigid container. To reheat, thaw and heat in a saucepan until hot, stirring occasionally.
