Cheese Dough

  • 1/2 lb Sharp (Extra Sharp) Cheddar Cheese (preferably aged)
  • 3/4 cup Butter, softened (6 ounces)
  • 1 teaspoon Spicy brown mustard
  • 2 Wiri wiri peppers (seeds and veins removed if less heat desired)
  • 2 1/4 cups plus 1 tablespoon Flour (11 ounces or 312 grams)
  • Pinch of salt (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 400 °F (200 °C) to prepare for baking the cheese straws.
  2. Prepare the Cheese Mixture in a Food Processor: Finely grate the extra sharp cheddar cheese. Add the grated cheese, softened butter, spicy brown mustard, and wiri wiri peppers into the food processor. Blend until you achieve a smooth, lump-free cheese paste.
  3. Incorporate the Flour and Salt: Add the flour and pinch of salt (if using) to the cheese paste, then continue mixing in the processor until a smooth, spreadable dough forms.
  4. Alternative Method Without Food Processor: If you do not have a food processor, grate the cheese using the fine shred side of a box grater. In a bowl, combine the grated cheese, softened butter, mustard, wiri wiri peppers, and salt if using. Mash together thoroughly with a fork or use a hand mixer to form a smooth paste. Gradually add flour about 1/2 cup at a time, folding it into the cheese paste until a smooth, spreadable dough develops.
  5. Pipe the Dough: Fit a pastry bag with a star tip (an open star tip size 4B is recommended). Fill the bag with the cheese dough. Pipe the dough onto a greased baking sheet, forming strips between 3 to 6 inches in length.
  6. Bake the Cheese Straws: Bake in the preheated oven at 400 °F for 10 to 15 minutes, or until the straws start to turn golden brown. Keep an eye on them to avoid burning.
  7. Cool and Serve: Remove the cheese straws from the oven and allow them to cool on the baking sheet before serving. This will help them firm up and develop their characteristic crisp texture.
