Ingredients

Fish:

2 white fish fillets (tilapia, cod, or haddock)
1 tbsp olive oil
1 tsp lemon juice
1 garlic clove, minced
Fresh herbs (thyme, parsley, or dill)
Salt & black pepper (to taste)

Vegetables:

1 cup broccoli florets
1 cup cauliflower florets
1 cup carrots, sliced
1 cup pumpkin, sliced into wedges
6–8 cherry tomatoes, halved
Fresh lettuce leaves

Instructions

  1. Marinate fish: Rub fish fillets with olive oil, lemon juice, garlic, salt, pepper, and herbs. Let sit for 15 minutes.
