Ingredients

Dry Ingredients

  • 3 cups (300 g) almond meal or flour, spooned into the cup, loosely packed
  • 1 cup (220 g) caster/superfine sugar
  • 1 cup flaked almonds

Wet Ingredients & Flavoring

  • 1/8 tsp almond essence (or to taste)
  • 3 large (105 g) egg whites

  • Icing sugar to dust

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (360°F) and line baking trays with non-stick baking paper.
  2. Prepare Almond Flakes: Spread the flaked almonds on a flat bowl or plate to make them ready for coating the cookie dough balls.
  3. Mix Dry and Wet Ingredients: In a large bowl, combine the almond meal, caster sugar, and almond essence. Lightly beat the egg whites and then stir them into the dry mix until you form a firm paste.
  4. Form Balls: Roll small balls of the mixture about 3 cm (1¼ inch) in diameter. Then roll each ball in the flaked almonds to coat them evenly.
  5. Arrange on Tray: Place the coated balls onto the prepared baking trays and gently press them down slightly to flatten.
  6. Bake: Bake in the preheated oven for 12 to 15 minutes or until the cookies are lightly browned on top.
  7. Cool and Store: Remove from the oven and allow the cookies to cool on racks. Store in an airtight container for up to a week or freeze for longer storage.
