This German Berliner recipe brings you the traditional taste of Germany’s favorite jam-filled doughnuts. Perfectly fluffy and lightly dusted with powdered sugar, these treats are ideal for celebrations or a cozy snack at home.

Ingredients

For the Dough:

  • 3 cups all-purpose flour
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1/2 cup lukewarm milk
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/4 cup unsalted butter, softened
  • 2 large eggs

For the Filling and Finishing:

  • 1/2 cup raspberry or apricot jam
  • Powdered sugar for dusting
  • Oil for frying (vegetable or canola oil)

Instructions

  1. Prepare the Dough: In a bowl, combine lukewarm milk and yeast, letting it activate for 5-10 minutes. Mix flour, sugar, salt, butter, and eggs with the yeast mixture to form a dough. Knead for 10 minutes until smooth.
  2. First Rise: Let the dough rise in a greased bowl for 1 hour, or until doubled in size.
  3. Roll Out and Shape: Roll out dough to 1/2-inch thickness. Cut with a 3-inch round cutter. Place on a baking sheet and let rise for 30 minutes.
  4. Fry Doughnuts: Heat oil to 350°F (175°C). Fry each doughnut for 2-3 minutes per side until golden. Drain on paper towels.
  5. Fill and Dust: Inject jam into each Berliner and dust with powdered sugar before serving.
