Ingredients

Potatoes

  • 1 1/2 lbs. potatoes
  • 1 1/2 tbsp. olive oil
  • 1/2 tsp. salt
  • 1/3 tsp. pepper
  • 1/2 tbsp. taco seasoning
  • 1/2 tbsp. oregano

Green Beans

  • 1 lb. green beans
  • 1/2 tbsp. olive oil
  • 4 garlic cloves, minced
  • 1/4 tsp. salt

Instructions

  1. Season Potatoes: Peel the potatoes and cut them into medium-sized cubes. Place the cubes into a mixing bowl and add 1 1/2 tablespoons olive oil, taco seasoning, oregano, 1/2 teaspoon salt, and 1/3 teaspoon pepper. Mix everything well to evenly coat the potatoes with seasonings.
  2. Bake Potatoes: Transfer the seasoned potatoes to a large baking sheet. Spread them out evenly so they do not touch. Bake in a preheated oven at 400°F (204°C) for 15 minutes to start cooking and crisping the potatoes.
  3. Season Beans: While potatoes bake, add the green beans to the same mixing bowl used for potatoes (no need to wash it). Add 1/2 tablespoon olive oil, minced garlic, and 1/4 teaspoon salt. Stir together to coat the green beans well with oil and garlic.
  4. Bake Beans Together with Potatoes: Remove the baking sheet from the oven. Add the seasoned green beans to the baking sheet with the partially baked potatoes. Gently mix to combine the vegetables. Return the baking sheet to the oven and bake for an additional 20 to 30 minutes or until both potatoes and green beans are tender and cooked through. Serve immediately.
