This Easy Frozen Strawberry Dessert is a refreshing, no-bake treat perfect for warm days or any occasion. It features a crunchy graham cracker crust layered with a creamy strawberry-infused filling that combines cream cheese, sweetened condensed milk, and whipped cream, topped with fresh diced strawberries and more graham cracker crumbs for crunch. Ready in just 20 minutes, this dessert serves up to 18 and requires no oven baking.

Ingredients

Crust

  • 3 cups graham cracker crumbs (about 22 full sheet graham crackers)
  • 3/4 cup unsalted butter, melted
  • 6 tablespoons granulated sugar

Filling

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 can (14 oz) sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 cup diced strawberries
  • 2 1/2 cups whole strawberries

Instructions

  1. Prepare the pan: Spray a 9 x 13 inch pan with non-stick spray and set it aside to prevent sticking.
  2. Make the crust: In a medium dish, combine graham cracker crumbs, granulated sugar, and melted butter. Press half of this crumb mixture firmly onto the bottom of the prepared pan to form an even crust layer. Save the remaining crumbs for topping.
  3. Puree strawberries: Place the whole strawberries in a blender and puree for 1-2 minutes until completely smooth. Set the strawberry puree aside for the filling.
  4. Whip the cream: In a medium bowl, beat the heavy whipping cream at low speed for 1 minute, then increase to high speed and continue beating until stiff peaks form, about 4 minutes. Set aside the whipped cream for folding into the filling.
  5. Prepare the filling base: In a large bowl, beat softened cream cheese and powdered sugar at low speed until creamy and smooth. Gradually add the sweetened condensed milk, vanilla extract, and strawberry puree while continuing to beat until all ingredients are fully combined.
  6. Incorporate whipped cream: Gently beat the whipped cream into the cream cheese mixture until evenly incorporated and smooth.
  7. Add diced strawberries: Fold in the diced strawberries carefully to preserve their shape, then spread this filling evenly over the graham cracker crust in the pan.
  8. Top dessert: Sprinkle the reserved graham cracker crumbs evenly over the strawberry filling as a crunchy topping. Refrigerate or freeze to set before serving if desired.

Notes

  • For best results, use fresh, ripe strawberries for natural sweetness and vibrant flavor.
  • This dessert can be refrigerated for a few hours or frozen for a firmer texture; allow it to thaw slightly before serving.
  • If you prefer less sweetness, reduce the amount of granulated sugar in the crust or powdered sugar in the filling.
  • To make smaller servings, cut the dessert into squares; it yields about 18 pieces.
  • Non-stick spray helps with easy removal and cleanup, but lining the pan with parchment paper is also an option.
  • Ensure cream cheese is fully softened to avoid lumps in the filling.
