Coffee Frosting

  • 1 1/2 teaspoon instant coffee granules
  • 24 tablespoon heavy whipping cream
  • 1/3 cup unsalted butter
  • 2 cups powdered sugar

Instructions

  1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Prepare an 8-inch baking dish by either spraying it with non-stick spray or lining it with parchment paper and spraying over the paper for easy removal.
  2. Melt Butter: In a microwave-safe bowl, melt 1 stick of unsalted butter until fully liquefied.
  3. Mix Wet Ingredients: In a large mixing bowl, combine the melted butter, 1 cup granulated sugar, 2 large eggs, and 1 teaspoon vanilla extract. Stir until the mixture is smooth and well incorporated.
  4. Add Coffee Flavor: Stir in 2 teaspoons of coffee extract or 1 tablespoon instant coffee to infuse rich coffee flavor into the batter.
  5. Incorporate Dry Ingredients: Sift together 1/3 cup unsweetened cocoa powder, 1/2 cup all-purpose flour, 1/4 teaspoon salt, and 1/4 teaspoon baking powder. Gradually add these dry ingredients into the wet mixture, folding gently until just combined, careful not to overmix.
  6. Bake: Pour and spread the batter evenly into the prepared baking dish. Bake in the preheated oven for 30 to 35 minutes. Check doneness by inserting a toothpick into the center; it should come out with a few moist crumbs but not wet batter.

In a large bowl, beat 1/3 cup unsalted butter until it becomes light and fluffy. Gradually add 2 cups powdered sugar, beating continuously until fully combined and creamy.
  9. Add Coffee Cream: Slowly mix the coffee-infused cream into the butter and sugar mixture. Start with 2 tablespoons, then add 1 tablespoon at a time until the frosting reaches a spreadable consistency.
