Cheesy and savory, these easy Stuffed Bell Peppers are made with flavorful ground beef and fluffy brown rice for a healthy and delicious meal. They can be customized with your choice of lean ground beef, sausage, turkey, chicken, or vegetarian ingredients.

Ingredients

Protein Mix:

  • 2 Tablespoons Extra-virgin Olive Oil or avocado oil
  • 1 Medium Onion, diced
  • 23 Garlic Cloves, minced
  • 1 pound Lean Ground Beef
  • 1½ Cup Cooked Brown Rice
  • 14.5 ounces Diced Tomatoes (one can)
  • 1 Tablespoon Tomato Paste
  • 1 Teaspoon Dried Oregano
  • 2 teaspoons Paprika
  • Kosher salt and pepper, to taste

Peppers:

  • 7 Large Bell Peppers, tops and cores removed
  • 1 Cup Shredded Cheddar Jack Cheese
  • Freshly chopped parsley, for garnish

Instructions

  1. Preheat Oven: Preheat the oven to 375°F and place the bell peppers cut side up in a baking dish.
  2. Sauté Onion and Garlic: In a large pan, heat olive oil and sauté onion until softened. Add garlic and cook for another minute.
  3. Cook Beef Mixture: Add ground beef and cook until no longer pink. Stir in cooked rice, diced tomatoes, tomato paste, oregano, and paprika. Cook until slightly reduced.
  4. Stuff Peppers: Fill each pepper with the beef mixture and bake until peppers are mostly tender.
  5. Add Cheese: Sprinkle shredded cheese over each pepper and bake until melted. Garnish with parsley before serving.

Notes

  • Substitutes: You can use quinoa instead of rice, or cauliflower rice for a low-carb option. Adjust paprika to taste, use ground turkey instead of beef, and substitute olive oil or cheese as needed.
  • Storage: Leftovers can be refrigerated for up to 5 days or frozen for up to 3 months.
