A lightened-up version of classic Chicken Piccata made right in your slow cooker. This easy weeknight dinner features tender chicken breast simmered in a lemony, briny sauce with capers. Just 3 WW Points per serving!

Ingredients

Chicken:

  • 2 Pounds of Boneless Skinless Chicken Breasts
  • ¼ Cup of All-Purpose Flour
  • Kosher Salt/Fresh Ground Pepper to Taste
  • Butter Flavored Vegetable Cooking Spray

Sauce:

  • 1 Cup of Fat-Free Chicken Broth
  • ½ Cup White Wine (Cooking)
  • ½ Cup Drained, Rinsed Capers
  • 4 Fresh Lemons for 1/2 Cup of Juice
  • 2 Tablespoons Cold Water + Cornstarch

Garnish:

  • Lemon Slices, Optional
  • Fresh Basil or Parsley, Optional

Instructions

  1. Prepare the chicken: Flatten boneless, skinless chicken breasts for even thickness.
  2. Dredge: Mix flour with salt and pepper. Coat chicken in flour.
  3. Sear for flavor: Brown chicken in a sauté pan using cooking spray and butter.
  4. Slow cook it: Transfer browned chicken to slow cooker with broth, wine, lemon juice, and capers. Cook on low for 4 hours.
  5. Make the sauce: Thicken cooking liquid with cornstarch. Simmer until thickened.
  6. Serve and garnish: Pour sauce over chicken. Garnish with lemon slices and herbs.
