These easy no-bake granola bars are a perfect healthy snack made with oats, nuts, seeds, and your choice of mix-ins, all bound together with creamy nut butter and honey or maple syrup. Ready in just 20 minutes with no baking required, they’re ideal for a quick energy boost or on-the-go munching.

Ingredients

Dry Ingredients

  • 1 ¾ cups old-fashioned oats or quick-cooking oats
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine sea salt (reduce if using regular table salt)
  • 2 cups mix-ins (nuts, seeds, chocolate, shredded coconut, or dried fruit)

Wet Ingredients

  • 1 cup creamy peanut butter or almond butter
  • ½ cup honey or maple syrup
  • 1 teaspoon vanilla extract

Instructions

  1. Prepare the baker: Line a 9-inch square baking pan with two strips of parchment paper crossed to fit the base and sides. This will help you remove and slice the bars easily.
  2. Mix the dry ingredients: In a large bowl, combine the oats, ground cinnamon, and sea salt until evenly blended; set aside.
  3. Process mix-ins: Briefly blitz the mix-ins in a food processor or blender until nuts and other ingredients are broken into small pieces smaller than a pinky nail. Alternatively, chop by hand. Add the chopped mix-ins to the oats mixture.
  4. Combine wet ingredients: Measure the nut butter into a liquid measuring cup, then add honey (or maple syrup) and vanilla extract. Stir well until fully blended. Optionally, gently warm the mixture to help blend, but ensure it cools to near room temperature before proceeding to avoid melting chocolate.
  5. Combine wet and dry mixtures: Pour the wet mixture over the dry ingredients. Stir vigorously with a big spoon until everything is evenly combined and no dry oats remain. If the mixture is too loose, slowly add more oats until it holds together well.
  6. Press mixture into pan: Transfer the mixture into the prepared pan. Use a spoon to spread it evenly, then press down firmly and evenly using a flat-bottomed object like a glass to compact the bars well.
  7. Chill: Cover the pan and refrigerate the mixture for at least 1 hour, preferably overnight. This allows the oats to absorb moisture and firm up for easier slicing.
  8. Slice and store: Lift the bars out using the parchment paper edges. Slice into 16 bars by cutting 4 columns and 4 rows with a sharp knife. Wrap individual bars in plastic wrap or parchment paper to prevent sticking. Store at room temperature for several days, refrigerate for up to two weeks, or freeze for months to maintain freshness.
