This Easy Mediterranean Chickpea Soup is a hearty, flavorful, and nutritious dish perfect for a cozy meal. Ingredients

Vegetables & Aromatics

  • 1 small sweet potato, peeled and cut into small cubes
  • 1 large yellow onion, chopped
  • 2 celery stalks, chopped
  • 2 carrots, peeled and cut into rounds
  • 1 red bell pepper, cored and chopped
  • 3 garlic cloves, minced
  • 1 tablespoon grated fresh ginger (more or less to your liking)
  • 1 cup packed chopped fresh parsley

Canned Goods

  • 2 (15-ounce) cans chickpeas, drained and rinsed
  • 1 (15-ounce) can crushed tomatoes

Liquids

  • 6 cups vegetable broth
  • Juice of 1 to 2 limes
  • Extra virgin olive oil (3 tablespoons plus extra for finishing)

Spices & Seasoning

  • Kosher salt, to taste
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • ¾ teaspoon turmeric
  • Dash of red pepper flakes (Aleppo pepper recommended)

Instructions

  1. Sauté Vegetables: In a large Dutch oven, heat 3 tablespoons of extra virgin olive oil over medium-high heat until shimmering but not smoking. Add the sweet potatoes, onions, celery, carrots, and bell peppers. Season with kosher salt to taste. Cook, tossing regularly, for about 7 minutes or until the sweet potatoes have softened.
  2. Add Aromatics and Chickpeas: Stir in the minced garlic, grated ginger, rinsed chickpeas, coriander, cumin, turmeric, and red pepper flakes. Continue to cook for another 5 minutes, stirring regularly to develop the spices and soften the garlic.
  3. Simmer Soup: Pour in the crushed tomatoes and vegetable broth. Bring the soup to a boil and let it cook for 5 minutes. Then reduce the heat to medium-low, cover the pot partially, and let it simmer for 25 minutes to allow the flavors to meld beautifully.
  4. Finish and Serve: Turn off the heat and stir in the juice of 1 to 2 limes along with the chopped fresh parsley. Optionally, add a little more fresh ginger if desired for extra zing. Serve hot and enjoy the comforting Mediterranean flavors.

  • You can substitute fresh cilantro for parsley if preferred.
