This easy high-protein creamy beef pasta combines lean ground beef with a flavorful tomato-based creamy sauce, enriched with light cream cheese and sour cream. Using chickpea flour pasta boosts protein content, making it a satisfying and nutritious meal that’s ready in just 35 minutes.

Ingredients

Pasta

  • 10 oz chickpea flour pasta (or any high-protein pasta)

Sauce and Meat

  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 1 medium green bell pepper, finely diced
  • 1 pound lean ground beef
  • 4 garlic cloves, crushed
  • 1 tablespoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons tomato paste
  • 1 cup tomato sauce (passata)
  • 1/2 cup light cream cheese
  • 1/2 cup light sour cream
  • 68 fresh basil leaves

Instructions

  1. Cook Pasta: Start by boiling a large pot of salted water and cooking the pasta according to the package instructions. Once done, reserve 1-2 cups of pasta water, then drain and set the pasta aside.
  2. Sauté Vegetables: Heat olive oil in a large skillet over medium heat. Add the diced onion and green bell pepper, cooking for about 3-4 minutes until softened.
  3. Brown Beef and Add Spices: Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Toss in crushed garlic, oregano, paprika, salt, and black pepper, cooking for another minute to release flavors.
  4. Add Tomato Base: Mix in the tomato paste and tomato sauce. Let it simmer together for about 5 minutes to develop a rich sauce.
  5. Create Creamy Sauce: Stir in the light cream cheese and sour cream until the sauce is smooth and creamy. Heat the sauce just until hot, avoiding boiling.
  6. Combine Pasta and Sauce: Add the cooked pasta to the skillet and toss it in the creamy beef sauce to coat thoroughly. Add reserved pasta water a splash at a time if the sauce seems too thick for a silky texture.
  7. Add Fresh Basil and Serve: Tear fresh basil leaves over the pasta, adjust seasoning as needed, and serve hot for a delicious meal.
