Chickpeas

  • 2 (15 oz) cans low-sodium chickpeas – drained and rinsed well

Seasoning and Oil

  • 12 tablespoons olive oil or avocado oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1/2 teaspoon kosher salt, plus more for topping
  • 1/4 teaspoon ground black pepper

Instructions

  1. Preheat the oven: Set the oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for roasting.
  2. Prep the chickpeas: Drain and rinse the chickpeas thoroughly. Spread them out onto a dry kitchen towel and pat dry with paper towels to remove as much moisture as possible. Transfer the chickpeas onto the lined baking sheet, spreading them out evenly. Let them sit on the baking sheet for 5-10 minutes to dry further.
  3. Season the chickpeas: In a small bowl, mix the chili powder, garlic powder, onion powder, cumin, kosher salt, and black pepper.
