Pasta

  • 8 ounces dry pasta

Sauce

  • 1 large ripe avocado
  • ¼ teaspoon finely grated garlic
  • Juice from a quarter of a lemon
  • Salt, to taste
  • Fresh ground pepper, to taste
  • Reserved pasta water (about ¼ to ½ cup)

Toppings

  • 1 medium tomato, diced
  • 1 green onion, finely sliced

Instructions

  1. Cook pasta: Bring a large pot of salted water to a boil. Add the dry pasta and cook according to package instructions until al dente. Before draining, reserve ½ cup of the hot pasta water. Drain the pasta and set aside.
  2. Make avocado sauce: While the pasta is cooking, mash the ripe avocado in a large mixing bowl. Stir in the finely grated garlic, freshly squeezed lemon juice from a quarter of a lemon, salt, and freshly ground pepper to taste. Pour in ¼ cup of the reserved hot pasta water and stir to create a smooth sauce. Add more pasta water if needed to achieve desired consistency.
  3. Combine pasta and sauce: Add the cooked pasta directly into the bowl with the avocado sauce. Toss well to evenly coat the pasta with the sauce.
  4. Add toppings and finish: Mix in the diced tomato and finely sliced green onion. Toss everything together gently. Adjust the sauce thickness by adding a little more pasta water if needed. Serve immediately while warm.
