Batter Ingredients

  • 1/2 cup butter (salted, room temperature)
  • 1 1/2 cups granulated sugar
  • 2 large eggs (room temperature)
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 2 tsp vanilla extract
  • 1 cup whole milk (3.25%, room temperature)
  • 2 cups all-purpose flour

Fruit and Topping

  • 2 cups red apples (peeled, cored & thinly sliced)
  • 3 tbsp brown sugar (for sprinkling on top)
  • 1 tsp cinnamon (for sprinkling on top)

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350 °F (175 °C) and grease a 9×13 inch deep baking pan with a neutral cooking oil spray to prevent sticking.
  2. Prepare the Apples: Peel the skins off the red apples, remove the core, then slice them thinly. Set the sliced apples aside until ready to use.
  3. Cream Butter and Sugar: In a large bowl or stand mixer, cream together the room temperature butter and granulated sugar until the mixture is smooth and fluffy.
  4. Add Eggs: Add eggs one at a time to the creamed mixture, mixing well after each addition to fully incorporate the eggs.
  5. Add Leavening and Vanilla: Add baking soda, baking powder, and vanilla extract to the mixture, mixing on low speed just until combined to avoid overmixing.
  6. Incorporate Milk: Slowly pour in the milk while continuing to mix. The batter might look separated at this stage but don’t worry, the flour will bring it together.
  7. Add Flour: Gradually add the all-purpose flour while mixing until the batter becomes smooth and well combined.
  8. Assemble the Cake: Pour half of the batter into the prepared baking dish. Evenly spread all of the sliced apples over the batter, then pour the remaining batter on top to cover the apples.
  9. Add Topping: In a small bowl, mix together the brown sugar and cinnamon. Gently sprinkle this mixture evenly over the top of the assembled cake batter.
  10. Bake the Cake: Bake in the preheated oven for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean. If the edges start to burn around 20–25 minutes, loosely tent the cake with aluminum foil and continue baking.
  11. Cool and Serve: Once baked, allow the cake to cool slightly before slicing. Serve warm or at room temperature and enjoy.
